About Beef Stroganoff
Named after the Stroganov family of Russian merchants. First appeared in a Russian cookbook in 1871. The original had no mushrooms or onions, just beef strips in mustard and broth. Spread globally after Russian emigrants fled the revolution. Became a 1950s American dinner party staple.
