Ukraines national dish, now UNESCO-listed. The bright red color comes from beets. Both Russia and Ukraine claim it, a bitter cultural dispute. Served cold in summer, hot in winter. Always with sour cream and dark bread. Over 70 regional varieties exist across Eastern Europe.
