Invented at Moti Mahal restaurant in Delhi by Kundan Lal Gujral, a refugee from Peshawar. Tandoori chicken was simmered in a velvety tomato, butter, and cream gravy to keep it from drying out. The gravy is mildly spiced, which made it a global gateway to Indian food. Chicken tikka masala is its British cousin. One of the most ordered Indian dishes worldwide.
