Spanish shepherds invented them as a fryable pastry in the mountains where bakeries were absent. The star shape creates crispy ridges. Dipped in thick hot chocolate for breakfast in Spain. Brought to Latin America where they became massively popular. Churro shops are called churrerias in Spain.
