About Dolma
Stuffed vegetables and rolled grape leaves, from the Turkish dolmak, to be filled or stuffed. Known in the palace kitchens of the Ottoman Topkapi. Grape leaves, peppers, eggplant, zucchini, and even mussels are stuffed. Meat versions served hot, rice versions served cold with lemon. Exists in some form from the Balkans to the Caucasus to Egypt.
