About Gazpacho
A cold raw vegetable soup from Andalusia, blended tomatoes, peppers, cucumber, garlic, bread, and olive oil. Roman soldiers carried mortar and pestle to crush bread, garlic, and vinegar, the ancestor before tomatoes arrived from the Americas. Served ice cold in summer. Nothing is cooked, preserving every vitamin. There are white and green varieties besides the classic red.
