Hungarian cowboys called gulyas invented this stew. Paprika, introduced from the Americas in the 1500s, transformed it. The dish has 37 official variations in Hungary. Not a thick stew traditionally, more of a hearty soup. Communist countries standardized a cheap version that gave goulash a bad name.
