About Khao Soi
The signature noodle soup of Chiang Mai in northern Thailand. A creamy coconut curry broth with boiled and crispy fried egg noodles on top. Brought by Yunnanese Chinese traders via Myanmar. Served with pickled mustard greens, shallots, and lime. One dish that captures the whole Silk Road in a bowl.
