About Kofta
Seasoned ground meat balls or patties, among the oldest prepared foods. Named from the Persian koftan, to pound or grind. Ranges from Moroccan kefta to Indian kofta curry to Swedish meatballs. Alexander the Great is said to have brought them back from Persia. Every empire between Rome and Delhi left a version behind.
