About Mansaf
The national dish of Jordan. Lamb cooked in a sauce of jameed, fermented dried yogurt, served over shrak flatbread with rice and toasted nuts. Bedouin tradition of hospitality, eaten communally from one platter with the right hand. Jameed is made by salting and drying sheep or goat yogurt into hard stones. Served at weddings, funerals, and reconciliation feasts.
