About Mapo Tofu

The name means pockmarked old lady tofu, after the widow Chen Mapo who served it in Chengdu. Silken tofu in a fiery sauce of doubanjiang chili bean paste and Sichuan peppercorns. The peppercorns create the numbing malat sensation. Traditional versions use beef, though many use pork. One of the most famous exports of Sichuan cuisine.
