About Naan
Leavened flatbread cooked slapped against the wall of a blazing tandoor oven. The word naan is Persian for bread. Recorded in India in the 1300s in the courts of Delhi. Yogurt in the dough gives the signature tang and char. Butter naan and garlic naan dominate restaurant menus worldwide. Peshawari naan is stuffed with nuts and coconut.
