About Pho
Pronounced fuh, not foe. Originated in northern Vietnam, influenced by French pot-au-feu. The broth simmers for 12-16 hours with star anise, cinnamon, and charred ginger. Street vendors start preparing broth at midnight. After the Vietnam War, refugees spread pho worldwide. A bowl costs 50 cents in Hanoi and 15 dollars in New York.
