About Poutine
Invented in rural Quebec, supposedly when a customer asked for cheese curds on fries. The gravy must be hot enough to slightly melt the curds. Authentic cheese curds squeak when you bite them. Considered low-class until the 2000s gourmet poutine revolution. Now a symbol of Canadian cuisine worldwide.
