A lamb curry brought to Kashmir by the Mughals, with Persian roots. The name is said to mean oil or red heat in Persian and Hindi. The red color traditionally comes from alkaline ratanjot flowers, not just chili. Braised slowly with yogurt, fennel, and ginger. A pillar of Kashmiri Wazwan banquet cuisine.
