Fried cheese served flaming in some restaurants, a Greek-American invention. Named after the small pan it cooks in. Made with graviera, kefalograviera, or halloumi. The original Greek version is simply pan-fried, no flames. Opa! is shouted when flaming, a restaurant theater tradition.
