About Samosa
The name comes from the Persian sambusa. Traders carried it along the Silk Road from Central Asia. The Indian version is filled with spiced potatoes, peas, and lentils. The 9th century Iranian poet Ishaq al-Isfahani mentioned sanbusaj in verse. Fillings vary wildly: minced meat in the north, pineapple in Africa, fish in Bengal.
