Created by Lebanese immigrants who adapted shawarma to Mexican ingredients. The vertical spit with pineapple is iconic. The pork marinates in dried chilies, achiote, and citrus. A true fusion dish combining Middle Eastern and Mesoamerican techniques. Voted the worlds best food by Taste Atlas in 2023.
