About Chicken Adobo
The national dish of the Philippines. Meat braised in vinegar, soy, garlic, bay, and peppercorns. The name comes from Spanish adobar, to marinate, but the technique predates colonization. Vinegar preserved meat in the tropical heat before refrigeration. Every family recipe differs in vinegar type and soy ratio. Arguments over adding sugar are eternal.
