About Sisig

A sizzling plate of chopped pig face, ears, and liver with onion, chili, and calamansi. Credited to Aling Lucing of Angeles City in the 1970s, building on older Kapampalan tradition. Originally a sour salad made from discarded pig parts near the former US air base. Often finished with a raw egg stirred in on the hot plate. A pulutan dish made for beer.
