About Beef Wellington
Named after the Duke of Wellington, who defeated Napoleon. A fillet of beef wrapped in pate and puff pastry. The pastry must be crisp while the beef stays rare inside, a technical challenge. Popularized by Gordon Ramsay as a signature dish. Richard Nixon loved it so much the White House served it frequently.
