About Coq au Vin
Originally a way to tenderize old roosters. Julius Caesar supposedly ate it after conquering Gaul. Julia Child made it famous in America. The chicken marinates in wine for 24 hours. Each French region uses its local wine: Burgundy, Champagne, or Alsace Riesling. The older the bird, the better the flavor.
