About Fondue
First recipe published in Zurich in 1699. Created to use up old cheese and stale bread during winter. The Swiss declared it the national dish in the 1930s to increase cheese consumption. Dropping your bread in the pot means you buy drinks. Raclette and fondue are different: raclette melts cheese on potatoes.
