Crispy golden potato cakes, the beloved farmers breakfast of Bern. Grated or sliced potatoes fried in butter until a crackling crust forms. Traditionally made from leftover boiled potatoes. Topped with cheese, egg, or smoked salmon in modern versions. The Swiss eat it as dinner with sausage and onion. A cousin of American hash browns.
