About Raclette
A Swiss ritual of melting the surface of a raclette cheese wheel and scraping it onto plates. First documented by monks in a 1291 text from Obwalden. Served with boiled potatoes, pickled onions, cornichons, and dried meat. The name comes from racler, to scrape. A Swiss raclette dinner is a social event built around one molten cheese.
