About Sushi
Originally a preservation method, fermenting fish in rice. The vinegar rice version was invented by Hanaya Yohei in Edo around 1824. The word sushi refers to the rice, not the fish. Fugu blowfish sushi requires a licensed chef as one bad cut kills you. Jiro Ono, subject of Jiro Dreams of Sushi, served Obama and Abe.
