About Tonkatsu
A breaded, deep-fried pork cutlet invented in 1899 at Rengatei restaurant in Tokyo. Part of yoshoku, Japanese adaptations of Western food. Served with shredded cabbage and thick tonkatsu sauce. Kurobuta black pork from Kagoshima is the premium version. The cutlet also anchors katsu curry and katsu sando sandwiches.
