About Pasta Puttanesca
Named after the ladies of the night, allegedly because it was quick to make between clients. Others say the strong aroma attracted customers. Invented in Naples in the mid-20th century. Uses pantry staples: tomatoes, olives, capers, anchovies, garlic. No cheese traditionally, the anchovies provide umami.
