About Risotto alla Milanese
Milans signature dish, vibrant yellow from saffron. Legend says a glass-stained apprentice added saffron to risotto at a wedding. The rice must be stirred constantly for 18 minutes. Only Carnaroli or Arborio rice works. The mantecatura final step adds cold butter and parmesan off the heat.
